Funny story about Rudolph's. We had never heard of them until my wife got her cell phone back in the 90's. Then she started getting all of these calls for Rudolph's. Come to find out, her number was the same as theirs but they had a 214 and hers was 972. We decided to go try them out. Wasn't overly impressed with their meat, mostly because it was over priced but do love their beef jerky.
This is what we do, but the problem is they do not have pork belly.

What's wrong with Rudulph's? I know a lot of people complain that they are overpriced but their cuts have always been really good to me.

Nothing wrong with Rudolph's. I go often, but they were closed yesterday as were many of them.

Finally got
The pork belly cut up, seasoned, and on the smoker. Thanks for all of the suggestions. I love going to meat markets so I will have plenty of driving this summer thanks to y'all.

Yummy. I find my pork bellies at a mexican meat market although sometimes I have to ask them a day or 2 ahead and they will get it. I make my home made bacon from it and is the best bacon around! Oh yeah.

Wow no mention of David's Meat Market????? Jupiter at Apollo rd in Garland, on the edge of Richardson.

We found David's when we moved to the area in 1981 and he just retired and his Grandson took over the business. Still awesome and the best butcher in the are that we've used. I still go there when I visit Dallas and cooler the meat home. :cheers2:

:iagree: The whole time reading this thread I was thinking about David's meat. My grandfather used to buy a whole hog (cut up and packaged of course) every 6 months from there until he passed. Always great tasting meats. :thumbs2:

Our children are coming up for the weekend with the grandchildren so I had to hit Sam's for some ribs and sausage.

I have to go to East Texas to preach a funeral. We decided to pull out our RV and stay several days. I picked up a small look loin and some ribs. I smoked those today to carry with us to eat on.

Thought I would try and make you hungry enough to grill this weekend.
