There are doubtless some criminals who would be deterred. There are others who will see the person openly carrying as the highest priority target. I prefer the lower profile - but I'm pleased when others are carrying openly. ;-)

I don't open carry in other states where the practice is permissable. I'd be pleased if Texas became an open-carry state, but I still wouldn't do it. I installed night sights on my Glocks just using a flat-tipped punch to set the new rear sights in position. That tool isn't necessary.
