The Blink Indoor 1-cam set is $66.99 on sale now. For $11 more, is there any reason not to buy the XT 1-cam set instead? It looks like the XT is higher resolution (1080 vs 720) in addition to being weather resistant and IR enabled. There's a $30 difference at list price, but for $11 more at the sale prices, I'm leaning toward the XT even though the Indoor cam would do what I need.

I would buy the XT. That way you have the flexibility to go outside and night vision.

Indoor cameras that plug in for power only, seem to better for indoors, if that's all you need. They usually have two way audio and faster response times.
