Asian groceries (H-Mart is awesome) have lots of fish (some of it still swimming) I'd eat uncooked. When I cook salmon at home, I only cook it to a point where the middle is warm, but still raw-colored. I find salmon that's been cooked through to be inedible.
TOTALLY agree! I’m almost disgusted by cooked salmon!! Love it raw! Just got back from a week in Japan...so many goodies!!

Love carpaccio and tartare (even had it at a trade show in Germany...not something I’d do in the USA!!).

Horse is quite tasty too!! Step outside your boundaries, explore, taste..!
In the US we don't eat domesticated animals and pets, at least not yet. So tell me PUCKER, do you also eat dog and cat?
I’ve been to Korea so not sure how to answer that truthfully!! :biggrinjester:

Growing up, for me there wasn't a sharp line between livestock and pets. Chickens rabbits steer could serve both roles. Sometimes we would trade the animals we raised so we weren't eating the same animals we raised.

Bitter, I think that Los Angeles had a law allowing Vietnamese to eat dog, not sure if they still have it. When I was in the Air Force there was a big scandal about the commissary selling horse meat. They called it some kind of a French name to disguise it but it was horse meat.

I never had any horse, camel, or Bison meat. However, I will never eat dogs, cats, or any kind of lizard or rodents

Would alligator qualify as a big lizard?

I've eaten it.

Cooked and very, very good.

Hmmm, frogs and turtles too though none eaten raw.

These are critters best cooked.

I've eaten dog 3 times, in China and Korea.
You can eat pretty much everything in China.
I need to track down some old photos of some business dinners in Guangdong.

It is made immediately after the animal is slaughtered. Usually, the early morning of a Holiday.

I would not have expected that with lamb! As far as beef goes I like my steaks very rare and I've had Steak Tartare on several occasions.
Remember, when i was growing up we drank from a hose and occasionally ate mud and sand, among many, MANY other things (see DeltaBoy's post). My immune systems is probably much stronger than today's youths'.
Maxwell,
I am certain, you can use beef (less fat) as well as lamb. The standard is the most tender red meat available. For some breed of lambs, its meat has gamey smell other do not.

Don't get me wrong. I love lamb but you are right, a lot of what we get is very gamey and not as good.

The Manor House (a restaurant on the grounds of the Houston) has a beef tartar appetizer that is delicious! They serve it with some spicy Aoli and it tastes great. I usually follow it up with their Steak Diane - it's mighty tasty as well.

Had wafer thin slices of raw horse at a market in Barcelona. It was pretty good.
