These days you'd be hard pressed to find a good 1911 for $500, though I'd like to think you can get something for less than $1000 that meets your criteria. I've heard good things about the Taurus 1911's but have no experience with them. Whatever you get, be sure to spend money on good magazines - they are critical to reliability in any auto, but especially for 1911s. I highly recommend Tripp Cobra mags or PSI-ACT mags (made in Italy; also sold as Novak's). If I was shopping for a 1911 for carry, I'd probably lean towards a high-cap ParaOrdnance, though you won't get one of those for $500.

haha it never hurts to make an offer, its a smith and wesson M&P15 bought in december with less than 120 rounds through it.
but I doubt I'd sell, I love it.

In all seriousness and before i go to bed, personally i wouldn't spend money on another 1911 unless it's Springfield TRP. 1911 looks good but few are made with great quality. Like i said, if you want a steel gun, get a Sig 239, Bersa thunder ultra compact, CZ Rami, or a Beretta. Ask around in 1911forum and see what other says.
Not sure how much you shoot, a 45 is expensive to shoot nowadays. I had to get into reloading to keep up the rise of ammo price. Anyways, always something to consider.

The very minimum I would spend for a 1911 to trust my life in would be $1000 for a Springfield Armory MC Operator. The Kimber Warrior would be okay as well once I've tested it for reliability. I hear too many horror stories about the Warrior/Desert Warrior.

I started a post almost exactly like yours last week! I swear to you that I read your post and I thought it was mine. We said almost the exact same things on requirements. And guess what else....? Are you on the edge of your seat yet? I BOUGHT that Para Ordnance at Academy that you were eye-balling! I got it Wednesday of this week. It is my FIRST 1911. I bought it for the same reasons that you mention as I too own several "plastic" guns already.

I'll tell you this, most of the responses that I got were to go Springfield Armory! EVERYONE I talk to says that S/A makes the BEST 1911.. I personally bought the Para because it appealed to me aesthetically. It has the lightened hammer, the skeletonized trigger, the Tru-Glow front sight, and the fit and finish are phenomenal. It feels wonderful in my hand too. I shot it today for the first time and I am very pleased with the accuracy.
Whatever you choose, it will be a good decision because it will be your first. Let us know which way you go.
