Now, what if he was dressed in nice jeans, a polo-type shirt, and had a chain with a dummy .38 special round on visible on it? Would he be called out?
Only if the chain also had a cross on it.

Or if the round had a cross engraved into it, or superimposed somehow.
Will this work?

There are no laws (I don't think) in Texas against carrying ammunition. I certainly would not suggest creating any.
Now if a school has a policy disallowing any firearm or firearm related paraphernalia, like the Glock penn, a Smith & Wesson T-shirt, or my Remington belt buckle (which I did wear to school, many, many times, from about 3rd grade up through about 7th grade, in the late seventies and have worn in college classrooms within the past couple years), then I can see them not allowing the ammo belts.
But if there are no rules against it, bringing it to their attention might motivate them to enact new rules. Let it be.

My oldest daughter got her dad and I "caricatures" in bullet form for Christmas. They are so awesome, but I can't wear mine to work

because it is weapon paraphanalia.
