Actually, one the most important things for me in a carry weapon is keeping it stock, that's one on the reasons i decided to give up on modding my s&w shield. The only thing I will change on my guns are the sights.
I'm curious as to the rationale for this, and also about what you consider to be "stock".

Technically, installing night sights or changing the grips (1911 / revolver) will make a gun non-stock. Do you avoid these types of changes, or just internal part upgrades like triggers?

Thinking through my carry rotation, most have some type of modification from pure "stock" condition if I use the broader definition of "non-stock".
