That is one beautiful spread! Great job! I have also made it 3x. To my very great fortune, I have an awesome Japanese friend that spoils us terribly with her homemade sushi. I only have to make it when I'm desperate. Lol. I like using canned tuna, cucumber sticks, avocado, and cream cheese as she does it.
I'll have to try the spoon trick. She just taught me to dip my fingers in a bowl of water.

Last night I went to the Hobby Center in Houston to see Book of Mormon. Before the play, we ate dinner at the Artista Restaurant attached to the Hobby Center. We had a sushi appetizer that was raw Tilapia soaked overnight in fresh lime juice and kept in the refrigerator. The chef said the acid in the lime juice "cooks" the fish and it was delicious.

Just something to think about if these pictures are making anyone want to go grab some ready-to-eat tuna sushi...
In Chicago, Austin, New York, and Washington DC, every single sushi restaurant sampled sold mislabeled tuna.
The bit about escolar's effects is unsettling.
