Couple of Questions from a Missourian

I am glad to see that Texas has a forum for concealed carry like Missouri. I have a Missouri CCW Permit and will be traveling to Texas to visit over Christmas (If it's OK to call it Christmas in Texas or should I say winter holiday that seems to be politically correct now), and I will be visiting often after that. If you get stopped by your LEO's while driving do you have to tell them you are carrying or wait till they ask you? In MO it is in their computer so the LEO knows as soon as he stops you. Better quit now or no one will read this.

Yes, most of us still call it "Christmas" here in Texas.
If/when you're pulled over by an LEO, according to the law you MUST hand him/her your CHL along with your driver's license. LEO will likely ask if you are armed. LEO is also allowed to take the weapon from you, and even unload it, and give it back before sending you on your merry way.
However, I have heard cases where many LEOs look at the CHL, then hand it back to the driver without comment. They say nothing about the gun, and don't seem to want any information.

As already stated, IF YOU ARE carrying a handgun, you must notify the officer who stopped you and hand them your CHL along with your driver's license. There is no requirement to do so if you ARE NOT carrying.
Although some feel that it is a good idea to notify the officer that you have a CHL even if you are not carrying at the time since the officer will know when they check the computer and will usually ask you about it. However, it is your choice in that case...

Just because the data's stored somewhere doesn't mean it's available. It seems it would depend on what's in the agreement between states on what information can be exchanged.
It's not a big deal, I'm just curious...

They might not need a database, just a sharp set of eyes. According to PDO, the Missouri CCW is a discrete stamp/endorsement on their driver's license, right above the photograph.
This is a situation where it might be wise to verbally declare the presence of the firearm(s), instead of depending upon the LEO to notice the CCW endorsement on the Missouri DL. Normally in such a situation I would keep my chatter to a minimum and simply hand over CHL on top of DL, but verbally declaring would short-circuit any later claim by the LEO that you failed to declare as required by Texas law. As I understand it, simply showing the CHL or equivalent document is all that is technically required. However, I am concerned that in the case of a Missouri DL, a CCW endorsement may be easily overlooked by a Texas LEO who may be unfamiliar with the document.
