She doesn't know if there's a no firearm policy in her company, nor did I see a 30.06. I assume her company does have such a policy. then comes the question, can I still legally carry since I am not an employee and hence not bound by their rules?

IANAL, but my understanding is this: Companies can, buy dint of their employee handbook or other well-known company policies, prohibit carry by their own employees without posting the well-known PC30.06 sign. That your wife is unaware of such policies indicates that the company hasn't done much to make her aware of them. (Has she ever been told "Read the handbook?")
For non-employees, they would have to provide notice per the methods in the law - this could be a PC30.06 sign, a written notice with PC30.06 language, or verbal.
In the absence of such notice, you would appear to be safe from prosecution should you decide to carry on the premesis of your wife's employer . . . assuming your mere presence doesn't make you a trespasser.
There is a possibility, however, that in a state with employment laws like those of Texas, you'd be putting your wife's job at hazard should it be discovered that you're "packing."
