If by castle doctrine you mean, can they defend their property in Texas, then yes, it would apply. If by castle doctrine you mean, can they carry a handgun in their vehicle while they are in Texas, then also yes.

And to clarify, the Castle Doctrine has nothing to do with carrying a firearm in your car, it is the Motorist Protection Act that allows that.
