I don't know any Texas laws you would break carrying a mock gun in general.
If you point one at a LEO, you stand a good chance of being shot at, and maybe being hit.

If you display one in a manner calculated to alarm, you will be charged with disorderly conduct.
If someone sees a bump under your shirt and calls 911, you probably will be gone before the cops arrive. If they do find you, you have not committed an offense. They might put you on the "nut list."
