IIRC series 70 (which I own) were machined. 80s were stamped.

Seriously, here is the deal.
In 1983 Colt made change to their 1911 line. Out of concerns for product liability, Colt's 1911-type pistols were redesigned internally with a new firing pin safety system. The new setup involved a small plunger located inside the slide to block the firing pin against movement, thus keeping the pistol from discharging accidentally should the pistol be dropped or hit hard while fully loaded with a round in the chamber. Two small sheet-metal levers working push aside the plunger, which frees up the firing pin to fire the weapon once the trigger had been deliberately depressed. The new pistols were all the Series 80 models, and they replaced all of the older Series 70 models in the Colt line of 1911's

Unload the gun.
Remove the slide.
Press the rear end of the firing pin in with a pencil or something similar and look at the breech face. If the tip of the firing pin protrudes through the firing pin hole, you're holding a Series 70 slide. If it stopped before it protruded, look for a round spring loaded plunger on the underside of the slide. If you see one, gently push it in while maintaining pressure on the back end of the firing pin. If the firing pin moves further forward when the plunger is pushed in, you're holding a series 80 slide.

What they said above. And, 70 Series pistols had a collet style barrel bushing rather than a solid one.
Most Colts are marked on the slide according to the series. The true test is what excaliber showed.
