Does anyone know a good gunsmith in the fort worth area, one that knows about older shotguns (Noble 12 ga pump)? I inherited it when my grandfather passed away and want to know if it's safe to shoot.

I want to second TAM's recommendation for Todd at Euless Guns & Ammo.
Todd has done great work on my guns and knows when to say, "No I can't do that."
When dealing with gunsmiths, always remember:

I've heard great reviews of Advanced Gun Works in Roanoke (http://www.advancedgunworks.com/" onclick="window.open(this.href);return false;) but haven't had any direct experience with them. One of the guys from the shop posts on here from time to time.
