Can u carry on Ft. Sam Houston or Ft. Sam National Cemetary?
Figured these are off limitsdue to federal propery, but thought I would ask.
"Federal property" is not automatically off limits. The law most people are familiar with, 18 USC 930, specifies buildings where federal employees work. It says nothing about "property" or "grounds".
Military installations get to set their own rules. I looked through the Fort Sam website, and it looks like their firearms/weapons policy is geared towards service members living on post. But there is this sentence:
"If you have any questions, please contact the Physical Security Section at 221-0110 or the Military Police Desk at 221-2222."
That would be my advice. Make the call, but explain your status and ask if they have a way for you to check your personally owned firearm at the gate.
BTW, it looks like you can't access the cemetery without getting at least a temporary base pass.

The cemetary is accessable without a temporary pass. You can access it from Harry Wurzbzach Rd. They have a guard stationed between the older section and the new section that keeps you from entering the rest of the post. Both my parents are buried there. My wife and I often eat lunch in that area of town and then go to the cemetary to put flowers on my parents grave. I like to carry while eating in that part of town (actually always), but was concerned about entering the cemetary?

I called the the Physical Security Section at 221-0110 at Ft. Sam Houston. I was informed they have 30.06 signs posted at the gate entries and that you cannot carry concealed on Ft. Sam. I was told that I would have to remove the ammunition from the gun and place the gun in the trunk, so that they would be separated. I told the man that I have a truck! He seemed a little confused on that one! But suggested separating the ammo and weapon, and putting the weapon in a locked box or adding a trigger lock in case of a truck. They do not have a way to check the firearm!
He did say that if your selected for inspection at the gate, you need to inform the guard that you have a weapon and that it is separated and/or locked from the ammo.

Frankly, I wouldn't, because I already know the VA's answer. Then again, I fall on the side of concealed carry being a "lawful purpose" per 18 USC 930(d), especially since my local post office(s) don't have the required signs posted.

Being completely in open air at a cemetery, not entering any buildings or secured areas, would leave me comfortable with carrying.
