I was going to post this as a reply in another thread, but I think it warrants it's own post. We all experience how much Google knows about us on a daily basis, although, I would venture to say, most people don't even notice it. They track everything from search terms, to purchases, to what videos you watch on youtube. Most commercial websites have Googles' tracking cookies, and they look at other common tracking cookies when you visit a Google site.

Google will allow you to download an archive of the data they've collected about you by going to http://www.google.com/takeout/. If you don't have a Google username the process is much more difficult, and even this process doesn't liberate every bit of data they have about you.

I have an Android phone, run Chrome on just about everything and Google search has been my default for what seems like a decade. They probably know more about me than I could ever remember and while I've tried to limit what I've given them I find it tiresome.

If you really want to go off the grid then you'll have to delete everything and start using Tor browser religiously.
