I know of no state statutes regarding the prohibition of carrying rifles or shotguns, loaded or un-loaded in a vehicle or otherwise. The only thing that comes to mind would be under prohibited weapons such as sawed-off shotguns and such.
You might run afoul of city ordinances or the possibility of your vehicle getting broken into and having your fully loaded weapon now in the hands of criminals.

Everything that is not prohibited by law is allowed. Check section 46 of the Penal Code: http://tlo2.tlc.state.tx.us/statutes/pe.toc.htm. The only prohibitions on long guns are the places weapons prohibited.

In some jurisdictions you can get nailed for disorderly conduct if you make yuppies wet their pants.

This has been asked and answered on this forum about a dozen times. I have repeatedely listed laws applicable. A use of the search function should reveal plenty of interesting reading.
