3 months Water storage. .22lr handgun, .22lr rifle, 3 months food, bbq grill, briquettes, small solar generator, knife, matches, ammo, metal pot, $10 worth of corn/squash/bean seeds, bicycle, backpack, shovel, wood, anything else needed to "prep"? A TEOTWAWKI scenario is slim to none, so you don't want to spend too much money and you don't want to buy anything that you don't use in normal everyday life.
Watched preppers on tv and thought that those guys had a good idea, but were just a bit overboard for a very unlikely scenario. we all "prep" by carrying a spare tire, but it would be folly to bring 4 spare tires every time we drive a car.
did i miss anything or should i leave out anything for a minimalist prep kit?

Something a little larger than a .22. I'm not sure they're rated for quick elimination of the "charcoal briquette" stealing Zombies!

Seriously, I like your simplified approach and short list of items. Only thing I'd add would be a propane grill or burner (and approx. 3 bottles) to make coffee or heat soups a little more efficiently.
Just my .02

Read "Lights Out"!
Laws that forbid the carrying of arms...disarm only those who are neither inclined nor determined to commit crimes... (Jefferson quoting Beccaria)
... tyrants accomplish their purposes ...by disarming the people, and making it an offense to keep arms. - Supreme Court Justice Joseph Story, 1840

I believe the basic political division in this country is not between liberals and conservatives but between those who believe that they should have a say in the personal lives of strangers and those who do not.
