A few years ago I cooked 18 racks of ribs in 2 batches, for a friend of mine mom's 60th birthday. He had a bunch of plum wood laying around. I told him we were going to use that. There were people taking the left overs with them. Friend of mine out in Fresno valley smoked some ribs using orange and almond wood.
