A few years ago I cooked 18 racks of ribs in 2 batches, for a friend of mine mom's 60th birthday. He had a bunch of plum wood laying around. I told him we were going to use that. There were people taking the left overs with them. That's a pretty good feeling.

I wish fruit wood was more plentiful.

Friend of mine out in Fresno valley smoked some ribs using orange and almond wood. Those turned out amazing as well.
